Several etymological explanations have been proposed for “gazpacho”. One theory connects it with the Latin caccabaceus, from caccabus, a cooking pot used by Greeks and Romans for hot dishes. The article’s suggested connection with a once-hot preparation is a theory rather than an established history.

Another explanation connects it with the Hispano-Arabic word gazpáco, and its early development is often associated with Al-Andalus. Early versions were humble food for labourers and peasants, using stale bread soaked in water and seasoned with garlic, oil and pepper. The striking difference is the absence of today’s star ingredient: tomatoes only reached Europe after contact with the Americas.


Gazpacho in Seville: an essential pleasure

Gazpacho has changed greatly over time. The term was used for soups or mashed preparations based on bread, oil, vinegar and salt. Andalusian gazpacho is the best-known version, but variations with strawberries or watermelon show how much scope there is for creativity.
